Coconut Curry

Serves: 6

Time: 35 Minutes

Ingredients:

¾ Cup Coconut Milk, Reduced Fat

1 Tablespoon Olive Oil

2 Tablespoons Green Curry Paste

7 Ounce Chicken Breast

2 Onions, Chopped Fine

Directions:

Press sauté and grease your instant pot. Cook your meat for three minutes. It should be evenly browned on both sides before you add in your onion. Cook for an additional four minutes so that your onion can soften.

Mix in your milk and two cups of water, adding in your curry paste. Stir until well combined.

Seal the lid, and cook on high pressure for twenty minutes.

Use a quick release, and serve warm.
